Back this week with Tasty Tuesday{cheers, screams, applause…tehe…just kidding}.  Squeezed in a wee bit of a fall break, well sort of!!!!  My breaks lately are usually to get caught up on life rather than take a break from it, but HEY, it's ALL a balancing act.  If any of you are like me, I'm the CEO of my life…WELL God is actually but I like to think I'm the BEST second in command EVER…Seriously.  Don't we all.  Most days it takes a miracle to get everything accomplished, but that is THE held belief one must hold when traveling leaps and bounds towards a destiny.  "SO Angela" you may ask, "what the heck does all that have to do with Tasty Tuesday?????"  Nada!!  Well, actually it does.  You see, we're given Free Will...which gives us the ability to make choices outside of those God sees for us.  One way we exercise this Will is through food choices.  This is a prime example of where we tend to think of ourselves as the CEO of our bodies…sometimes fueling it with empty calories and loads of sugar.  But when overconsumption of unhealthy choices cause physical complications, that's when we must relinquish the title and align with our healths greater good.  We are always given messages all the time through our body..little signals and clues towards issues we need to address.  If we get quiet and listen we can hear exactly what we need in order to feel whole.  Now I'm not saying it's as easy as that sentence sounds but it is truth.  Finding time, even 5 minutes to let yourself align with your body can provide amazing insights…and over time can create significant changes.  I bet you'll even start craving for more than just 5 minutes.  ALL just by listening to the Divine already within your heart.  The Food Stories here are my way of sharing options towards healthy eating while trying to make it FUN.  Food doesn't have to be something fearful, it can totally be an outlet for creativity.  Creativity reduces stress, less Stress means a happier soul, a happier Soul is one with God and that my friends means we're on the right path.  A blessed miracle.  Yipeeeeee!!!!!!  OK, now that we're all straightened out, let's get on with this weeks Food Story.  This one I'm calling Smoky Scalloped Sweet Potato Onion Dip{dairy-free} + Almond Quinoa Crackers topped with Honey Glazed Sunflower Seeds.  A mouthful of Deliciousness.  And don't forget to check out all the visual goodies below.  Lot's of Photos and of course a Video Tutorial.  ON with the Adventure:)

Here's what you'll need to get started...


Smoky Scalloped Sweet Potato Onion Dip{dairy-free} + Almond Quinoa Crackers topped with Honey Glazed Sunflower Seeds | Seed Plant Water Grow

Smoky Scalloped Sweet Potato Onion Dip{dairy-free}

2 medium Sweet Potatoes

1 Onion

1 can Coconut Milk

2 large Roasted Red Peppers

1/2 cup Nutritional Yeast

2 tsp Smoked Paprika

1 tsp Salt

 

In a high speed blender, add the Coconut Milk, Roasted Red Peppers, Nutritional Yeast, Smoked Paprika, and Salt.  Blitz till combined.  Pour mixture into a large prep bowl and set aside.  Next, peel the Sweet Potatoes and Onion.  Slice them carefully on a mandolin into thin slices.  Not paper thin but  "baked chip" thin.  I usually set mine on the first notch(check out photo in the gallery below).  Now grab a 9 inch baking pan or casserole dish and grease it good…then start layering it all up.  First with the Sweet Potato Slices, then Onion Slices, then drizzle 1/4 cup or so of the liquid mixture overtop and keep going till all your supplies are depleted.  Rub the top with some of the mixture and press everything down a bit.  Place in a 350 degree oven for approximately 2 hours.  I like to re-coat the top every 30 minutes with the bubbly goodness that collects in the corner of the pan.  This helps keep it hydrated.  You'll know it's done when all the liquid mixture has absorbed into the Sweet Potatoes and a knife test comes out clean from the center.  Remove from oven and let cool for 15 minutes or so.  Place in a food processor and blitz till combined.  Keep scrolling for the Almond Quinoa Crackers as well as to check out the Video Tutorial of the whole process.

Almond Quinoa Crackers topped with Honey Glazed Sunflower Seeds

 

1/2 cup Almond Meal

1/2 cup Quinoa Flour

2 tbsp Flax Meal

1/4 cup Nutritional Yeast

2 1/2 tsp Thyme

1/2 tsp Garlic Powder

1/2 tsp Onion Powder

1/2 tsp Salt

2 tsp Dark Muscovado Sugar

2 tbsp Sesame Seeds

2 tbsp Poppy Seeds

1/2 tsp Baking Soda

1/3 cup Water

2 tbsp Coconut Oil(melted)

1/2 cup Sunflower Seeds

1 tsp Balsamic Vinegar

2 tsp Honey

 

To a bowl add the Almond Meal, Quinoa Flour, Flax Meal, Nutritional Yeast, 2 tsp of Thyme, Garlic Powder, Onion Powder, Salt, Muscovado Sugar, Sesame Seeds, Poppy Seeds and Baking Soda.  Give it a quick mix.  To that add the Water and Coconut Oil.  Mix together till it forms a dough.  Add a little quinoa flour if needed to pull it all together.  Split the dough in half.  Sprinkle a little Quinoa Flour on a piece of parchment and place half of the dough on it...press into a disk then proceed to roll it out.  You want it to be fairly thin but still thick enough to hold up as a cracker.  Next, cut the rolled out dough into squares.  Then to a bowl add the Sunflower Seeds, 1/2 of tsp Thyme, Balsamic Vinegar, and Honey.  Mix together.  Take half of the Sunflower Seed mixture and press into the cracker squares(see photos below).  Now grab the second half of your Almond Quinoa dough and repeat.  Bake at 350 for 25 minutes.  I like to flip the pan around about half way through.  Remove when golden.

Now it's time to serve.  Add the Smoky Scalloped Sweet Potato Onion Dip to your favorite dip serving dish and sprinkle the top with some Smoked Paprika and Parsley…then start dipping with those Almond Quinoa Crackers topped with Honey Glazed Sunflower Seeds.  Eat em UP.  ENJOY!!:)
