Blueberry Vinaigrette with Baby Greens and Toasted Walnuts

Here's this weeks #TastyTuesday in collaboration with Xtend Barre Nashville…all about providing fun tips and treats.

So you're walking through the market to grab a few quick items when your eye catches these beautiful Blueberries.  Now you think to yourself…"I sure do love Blueberries and enjoy them in smoothies, muffins, or as a quick snack but how can I mix things up?"  (Blueberries are the antioxidant powerhouse, they provide protection to most every body system so finding ways to include them in other culinary applications is a win win towards whole body health)  After a brief ponder a thought occurs…why not make a Blueberry vinaigrette.  You could pair it with superfood baby greens(phytonutrient rich) and toss in your yummy sweet and savory toasted walnuts(excellent source for omega-3) for good measure.  Oh yes, that sounds perfect:) 

Blueberry Vinaigrette

1 cup fresh blueberries

1/4 cup rice vinegar

1/4 cup balsamic vinegar

1/3 cup olive oil

1/2 juice of lemon

15 thyme sprigs, small (leaves only)

1/2 tsp salt

1/4 tsp pepper

1/2 tsp smoked paprika

 

Toss everything in a high speed blender and blitz away till all ingredients are incorporated.

 

Sweet and Savory Toasted Walnuts

2 cups walnuts

2 tbsp maple syrup

1 tbsp coconut oil

2 tbsp nutritional yeast

 

Place walnuts in a bowl and mix with maple syrup till equally distributed.  Spread evenly onto a non-stick cookie sheet and toast at 400 for 15 mins.  Remove and let cool briefly.  Place warm walnuts in a bowl, add coconut oil and toss together.  Then sprinkle nutritional yeast and mix till all walnuts are coated.
