Just take a couple and grate into your favorite meals to help maximize your wholesome food intake. For example, making your favorite muffins...try using 1/4 cup less sugar and grate in a carrot instead. This will help keep the sweet factor balanced while providing a better vehicle for nutrient absorption. Making your favorite pot of chili, soup, stew, salad?? Easy Easy, just grate those carrots away. They end up merging in so beautifully you'll hardly know they're there and a great trick if you've got some finicky eaters in the house. Carrots have long been praised as the ultimate health food providing a whopping dose of Vitamin A that supports healthy immune systems and cell growth. While I grate them into everything, I do love Roasted Carrots. Below is a few shots of that process. I generally am fairly simple with my roasting preparation…olive oil, balsamic, salt, pepper…and roast at 450 for about 30 minutes(I like mine good and caramelized), tossing at the fifteen minute mark. Finish off with a sprinkle of parsley and a spritz of lemon.
