Quinoa Corn Salad featuring Baby Heirloom Tomato + Fresh Cilantro | Seed Plant Water Grow

With 4th of July just around the corner, I wanted to create something Simple, Fresh, and HEALTHY that would easily pair with just about any party time feast.  Introducing…Quinoa Corn Salad featuring Baby Heirloom Tomato + Fresh Cilantro.  Quinoa is a Gluten-Free grain that easily travels many culinary paths, each producing distinguishable flavor adventures.  Whether using white, red, or black or in cookies, as porridge or as a simple side dish, Quinoa is a never-ending power food.  It's full of protein, fiber, as well as iron and is a staple among Vegans and Vegetarians.  So by pairing Quinoa with vitamin rich Corn, phytonutrient filled Cilantro, antioxidant packed Tomato and a whole host of other nutritious goodies raises the bar BIG TIME against other shindig favorites.  You won't be disappointed and your tummy will Thank You:)

Here's what you'll need...

1 cup quinoa (I used Bob's Red Mill pre-rinsed)

note:  if use another brand, please check packaging for rinse instructions

2 cups low-sodium vegetable broth

2 ears of corn (I used non-gmo corn)

2 cups baby heirloom tomatoes (measured when cut)

1 cup fresh cilantro (approximately one full bundle)

1 large shallot

2 serrano peppers

1 tbsp garlic (I used prepared)

1/4 cup fresh lime juice (approximately 2 limes)

1 tbsp olive oil

1/2 tsp salt

1/2 tsp ground black pepper

 

In a sauce pan place vegetable broth and bring to a boil, add quinoa, reduce heat and simmer for 12 minutes or per package instructions.  When the quinoa is ready, remove from heat ensuring all broth has incorporated.  Set aside to cool, takes up to 30 minutes.   Now it's time to prep veggies.  First, wrap a paper towel around one ear of corn and place in the microwave, cook for 3 minutes.  Repeat with the second ear of corn.  This is the quick method, you can also use grilled corn or canned if that is what you have on hand(use approximately 2 cups) but I highly recommend fresh.  Once the corn is ready and has cooled, carefully cut the kernels from the cob.  Set aside.  Cut baby heirloom tomatoes in quarters.  Set aside.  Cut serrano peppers length wise and remove the seeds and rib.  Dice and set aside.  Dice shallot and set aside.  Chop bundle of cilantro leaves and set aside.  Now you're ready to assemble.  There's no fancy way here folks so just start adding everything into a large bowl and toss.  Voilà!!:)
