This weeks food story has been on the project list for a while so I'm extremely happy to share my creative adventure in popping Sorghum.  PLUS...my sister was in town and I was able to sweet talk her into being a hand model and join in the fun( a few photos below).  She's amazing…what are sister's for!!  Well…popping Sorghum I must say is a neat little venture.  You can either pop by stove top, popcorn maker, or microwave which is the route we'll be discussing today.  I've popped using all variations but found the microwave to be...for me...the most successful.  So don't let that deter any of you seasoned poppers out there who have better success with the other methods.  Sorghum usually only pops about 80-90 percent of the grain but the tiny Mini-Pops it produces are just too CUTE.  It's like being a kid again, sitting at your dolls table having tea out tiny cups snacking on a bag of Sorghum Mini-Pops.  So let's all hold that visual and get started with some popping FUN!!

What is Sorghum?

Sorghum is a whole grain known for it's natural drought tolerance and is used for livestock feed, biofuel, and as a primary food source in some parts of the world.  It's widely becoming more and more popular due to the fact it's gluten-free...which provides a nice alternative for those with celiacs disease.  Sorghum is an excellent source for Dietary Fiber, Iron, and Protein as well as super rich in Antioxidants.  But the most fun thing about Sorghum is…………...

Here's what you'll need to get started making Popped Sorghum with White Truffle Oil + Chili Cheese{dairy-free} Seasoning

1/4 cup Whole Grain Sorghum (I used Bob's Red Mill. If you use another brand make sure it is popping Sorghum)

2 tsp White Truffle Oil (I used the Olive Oil Store's White Truffle Oil)

1 tbsp Chili Powder

3 tbsp Nutritional Yeast (you know...that fun flaky stuff you find in barrels in the bulk section...not to be confused with the little packets used in making bread)

1/2 tsp Salt

andseveral Brown Paper Bags

 

First…add the Chili Powder, Nutritional Yeast, and Salt to a Mortar & Pestle or an Herb & Spice Mill.  If you don't have either of those then just throw in a small bowl and mix with a fork, pressing against the mixture to breakup up the Nutritional Yeast.  Once you have the ingredients incorporated set aside.  Now, grab one of the Brown Paper Bags and add the Sorghum Grain then fold the top down in equal portions six times.  See visual guide below.

Place folded bag on it's side in the microwave and heat for 2 1/2 minutes.  I've found this to be the perfect time frame but again all microwaves are different so make adjustments as needed.  You just want to stop the process when the popping slows because it can go from being perfect to burned in 15 sec due to the delicate nature of the grain.  And you'll have to really listen because the popping is rather quite.  Once you've completed this step remove bag from microwave CAREFULLY...it is HOT and let cool for a few minutes.  While it cools go ahead and place the White Truffle Oil in a bowl.  When the Mini-Pops are ready throw them in and toss.  Now add the Chili Cheese {dairy-free} Seasoning to your liking and you're ready to eat.  ENJOY!!
