Lately...Popsicle ideas have been NAGGING for a little attention so who am I to argue with something Cold, Sweet, and Tasty.  Not Me.  So I heeded the creative prompts.  They kept pointing towards a more non-traditional path but still using simple ingredients.  So off I went in full pursuit of this Ice Pop adventure.  It didn't take very long for me to locate my eventual companions…they were pretty much waiting close by…ALL eager for an introduction.  So let me do the honors…meet Pineapple, Cherry, and Pecan.  Amazing bunch they are…Sweet, Yummy, and Kind.  Together we forged a union and moved forward to create something different.  Come join us on our Creative Journey:)

Here's what you'll need to get started

Jumbo Ice Cube Tray (I used a Scotch Rocks BPA free silicone tray)

Food Grade Wooden Treat Sticks

1 Pineapple

1 Bag of Fresh Cherries

4 Cups(or 16oz) of Pecans

1/2 Cup Coconut Water (I used Vita Coco)

1/4 Cup Maple Syrup

2 Tbsp Unsweetened Raw Cacao or Cocoa Powder (I used Navitas Raw Cacao Powder)

1/4 Cup Honey

 

Let's first start with the Cherries.  Place bag of Fresh Cherries(pits and all), Coconut Water, and Maple Syrup in a sauce pan and bring up to heat.  Simmer for 30 minutes(I usually like to press the cherries as they warm up and start breaking open to help release the juices).  Grab a colander/strainer and place over a large bowl.  Transfer mixture to colander/strainer and press till all juice is released.  Add the Unsweetened Raw Cacao or Cocoa Powder and whisk together.  Once cooled place in a dispensing container(I like to use a clear squeeze bottle).  Now grab the Jumbo Ice Cube Tray and fill each compartment 1/4 full.  Place in freezer for about an hour to start the chilling process.  While that's cooling, cut up the Pineapple(remove skin and core) and place in a high speed blender and blitz on high for a few minutes till completely smooth.  Place mixture in a dispensing container.  After an hour, remove chilled Chocolate Cherry mixture from freezer and add the blitzed Pineapple on top, filling completely each compartment.  Place back in the freezer for about 15-20 minutes.  This will give you time to prepare your Wooden Treat Sticks.  So grab a pen, sharpie, or your favorite writing instrument(I like to use Zig Calligraphy) and write out some EMPOWERING words.  I decided to spread the message of Peace, Love, and Hope.

Now that you've got your Wooden Treat Sticks empowered and ready, pull your Ice Pops out and place in the mixture diagonally(refer to Motion Image at the start of this story for a visual).  This placement helps add stability when eating your frozen Ice Pop.  Place back in freezer once again and let chill for at least 8 hours.  While those are freezing up lets get going with the Pecans.  Pre-heat oven to 400 degrees.  Give Pecans a good rough chop or a quick blitz in the food processor just to break them up a bit.  Place in a bowl and add Honey.  Toss till coated.  Place mixture on a Non-Stick/Silpat Baking Mat and spread evenly.  Place in oven and toast for 15 minutes, tossing every 5 minutes to ensure evenness( I like mine extra toasty so I'll usually go an additional 5 minutes, but watch careful because you don't want to over do it).  Remove from oven and let cool completely.  Set aside in an air tight container.  When the 8 hours are up and your Ice Pops are ready take your Pecan mixture and give it one last blitz in the food processor to create a fine texture.  This will make it adhere better.  Remove Ice Pops from the freezer and carefully pull at the side of the Jumbo Silicone Ice Cube Tray to release your treat and gently pull UP by the Wooden Treat Stick.  Let it set at room temperature for a few minutes then roll the bottom in the Pecan mixture.  Place on plate or tray and put back in the freezer.  Repeat till all Ice Pops are coated.  Now you're ready for the real FUN.  Eat em UP!!  Enjoy:)
