I don't know about you, but I LOVE Watermelon!!  Huge Fan.  Starting as a child I'd sprinkle it with some salt and gobble it up.  As the years went on, I gathered all kinds of neat inspiration from various Watermelon pairings…devouring every morsel of palette goodness.  So with this food story I wanted to try something a little more out of the box...by incorporating inspiration from my culinary journeys into a combination of ingredients that kept a nostalgic tone while standing out as creatively different.

Sashimi you say??  Well…I'm also a fan of Sashimi.  Traditionally this entails raw fish sliced into thin pieces but for the purpose of this story…Watermelon.  And yes, there are methods of preparing Watermelon that resemble raw tuna somewhat in texture and flavor but that bit of fun is reserved for another creative food day.  This set up borrows on the look and feel of a simple sashimi layout while pairing it with familiar healthy ingredients.  The overall combination is a flavor win and is now one of my favorite ways to enjoy nutrient rich Watermelon.
