For this weeks food story I was able to utilize a couple of items that have been on the culinary creative list.  First…the Vitamix Dry Container and second…Lodge's Cast Iron Minis.  The Dry Container was purchased with the intent of making my own homemade flours so this food story was perfect for it's Maiden Voyage.  And the Minis have been on hold for another creative project but seeing that it might be a few more food stories before I work out THAT recipe I thought THIS recipe would totally represent what the Minis are all about…individual servings.  So let's get started with our ADVENTURE:)

we'll begin with those...


Quinoa Flour

Vitamix with Dry Container

1 Bag Quinoa (I used Bob's Red Mill, it's pre-washed to remove Saponins, a bitter coating found on the Seed.   If use another brand, read directions on rinsing and prep before using the product)

 

Start by spreading the Quinoa on a baking sheet and toast for 20 minutes.  Be sure and give it a quick stir at the 10 minute mark.  Remove from oven and let cool.  Place half the batch in the Vitamix Dry Container and blitz till incorporated into flour.  Transfer to a storage container.  Repeat with second batch.  Store in refrigerator.  If you do not have a Vitamix Dry Container, no worries.  You can purchase already prepared Quinoa Flour here.


Sweet Potato Paste

1 small Sweet Potato

1/4 cup Honey (or Agave)

 

OK, confession…I usually blitz them in the microwave on the Potato setting but when I do bake in the oven, I usually do so at 400 for around hour…adjust time according to size.  Let cool.  Remove skin and place Potato in a food processor.  Add Honey or Agave.  Blitz till incorporated. 


Quick Marinara Sauce

1 can Crushed Tomatoes(low sodium)

2 Shallots Chopped

1 Tbsp Minced Garlic

2 Tbsp Olive Oil

1 Tsp Oregano

1 Tsp Thyme

1 Tsp Parsley

1 Tsp Basil

1/2 Tsp Salt (or to taste)

 

To a sauce pan add Olive Oil, Shallots, and Garlic.  Sauté over medium heat for a few minutes.  Then add the rest of the ingredients.  Let simmer on medium low heat for an hour.  You may also use your favorite store prepared Marinara.


Caramelized Onions

2 large Onions halved and sliced

2 Tbsp Olive Oil

1/2 Tsp Salt


In a large skillet add Olive Oil and bring up to medium heat.  Add Onions and Salt.  Toss the Onions around every 5 minutes or so and cook till they start to caramelize.  Be sure to scrap the yummy bits off the bottom of the pan as you go.  The whole process should take up to 45 minutes.


Sautéed Baby Bellas

3 packs Baby Bellas

1 Tbsp Olive Oil

1 Tbsp Balsamic Vinegar

1/2 Tsp Salt

 

Prepare Bellas by wiping the caps gently with a wet towel to clean then cut into medium slices. Place Olive Oil in a large skillet over medium heat and add sliced Bellas, Balsamic, and Salt.  Cook until they become tender and browned.


Toasted Pine Nuts

1 cup Pine Nuts (or more for snacking)

 

Add Pine Nuts to a baking sheet and bake at 350 for 15 minutes…tossing every 5 minutes to ensure evenness in toasting.


Now that we've done our prep work let's get started...Here's what you'll need...

1 cup Quinoa Flour

1/3 cup Sweet Potato Paste

1/2 Tsp Salt

1 Tsp Baking Powder

1 Tbsp Coconut Oil (melted)

2/3 cup Water

Marinara Sauce

Caramelized Onions

Sautéed Baby Bellas

Fresh Basil Leaves

Toasted Pine Nuts

5 - Lodge Cast Iron Minis(5 inch)

5 cut 7 x 7 Parchment Squares

 

Lets first get started with making the Sweet Potato Quinoa Mini Cakes.  Preheat oven to 350.  In a large bowl add Quinoa Flour, Salt, and Baking Powder...give it a quick mix.  Then add the Sweet Potato Paste, Coconut Oil, and Water.  Mix together.  Place one 7 x 7 parchment square into a Cast Iron Mini then scoop in two spoonfuls of the mix.  Spread evenly.  Repeat with the remaining 4.  I prepared a quick video below to help give you a visual of this process.


Place in the oven and bake for 35 minutes.  Heres what they'll look like...

Now comes the fun part.  Smooth on some Marinara Sauce, add Caramelized Onions and Sautéed Baby Bellas then pop back in the oven for 10 minutes to get everything warm and toasty.  Remove.  You can either serve in the Mini Cast Iron(be careful though it's HOT) or lift the entire Mini Cake Pizza out by the parchment and place on a serving plate.  Add chopped Fresh Basil, Toasted Pine Nuts, and Eat Em UP.  Enjoy!!:)
