Making Ice Cream is by far one of my most favorite things and because it is so easy I would be hard pressed now a days to even purchase at the grocery.  And yes, there are all kinds of new and healthier options available but for me it's just not the same as Homemade.  Making your own provides unlimited options by being able to personalize exactly the way you like it…PLUS...you know what's going into the mix.  All you need is an Ice Cream Maker and a little bit of time.  For this weeks Food Story, I wanted to shake things up a bit and get a little creative.  So I decided to go with Homemade Mini Waffle Cones and Shot Glasses filled with Toasted Pecans for dipping.  Continue below to follow this Ice Cream Story's journey.  And be sure to go all the way to the end as my sister stepped in as a model again.  She's become quite the Food Blog model:)

Here's what you'll need to get started...

Butter Pecan Coconut Milk Ice Cream

2 cans Unsweetened Coconut Milk

1/4 cup Dark Muscovado Sugar

30 drops Alcohol Free Liquid Stevia

8 tbsp Dairy-Free Butter(I used Earth Balance Soy Free)

4 tsp Madagascar Bourbon Vanilla

16 oz bag of Pecans

1/8 cup Maple Syrup

Ice Cream Maker

First things first...make sure the drum from the Ice Cream Maker is placed in the freezer.  It needs a good 24 hours or more to freeze completely.  Next, in a sauce pan combine Coconut Milk, Dark Muscovado Sugar, Alcohol Free Liquid Stevia, and Dairy-Free Butter.  Bring up to medium high heat.  Once the mix is combined and starts a rolling boil remove from heat.  Whisk in Madagascar Bourbon Vanilla.  Place mixture in a large storage container (I like to use a large mason jar) and let cool for a few hours.  Then place in refrigerator to cool for an additional 8 hours.

While that's cooling, let's get to work on the toasted Pecans.  Pre-heat oven to 400.  Take the bag of Pecans and spread out onto a baking sheet.  When oven is ready, pop them in and toast for 15 minutes tossing every 5 minutes (I like mine extra toasty so I usually go an additional 5 minutes).  Remove from oven and let cool.  Divide batch in half.  Place the first batch in a food processor and blitz just to get the pieces broken up.  Transfer to a bowl and add the Maple Syrup.  Mix together.  Place mixture in a storage container and put in the freezer.  These will be our Pecans for the Ice Cream and they incorporate perfectly when super cold.  Next, take the second batch of Pecans and place in the food processor.  This time blitz till it forms a meal like texture.  Remove and place in a storage container.  This will be our Pecans for dipping.

After mixture has cooled, then we're ready to make some Ice Cream.  Place Ice Cream Maker on a steady surface and add the frozen drum.  Place the churning piece inside the drum and secure the open face lid.  Turn on machine per Ice Cream Makers instructions.  Remove cooled mixture from refrigerator and add to the Ice Cream maker drum.  Let it churn.  After about 15 minutes take a peek at the consistency.  Usually around the 15 to 20 minute mark is when the mixture is ready to receive the frozen Pecans.  Remove Pecans from freezer and add 1/2 cup slowly to the churning mix.  Give it a second to incorporate.  Then add an additional 1/2 cup.  Let it run for about 5 more minutes.  Turn machine off.  The whole Ice Cream making process should take around 30 minutes.  Remove Ice Cream from drum and place in a metal bread pan or other storage container.  Transfer to freezer to finish cooling for another few hours.  I've prepared a video below with all the fun details for making Butter Pecan Coconut Milk Ice Cream…check it out!!

Mini Waffle Cones

3/4 cup All Purpose Gluten Free Flour (I used Bob's Red Mill)

4 tbsp Dairy-Free Butter…melted (I used Earth Balance Soy Free)

1/4 cup Maple Syrup

2 Eggs OR 2 Ener G Egg Replacer(per instructions)

4 tbsp Unsweetened Coconut Milk

2 tsp Madagascar Bourbon Vanilla (add an extra tsp when using the Egg Substitute)

1/4 tsp Salt

Mini Waffle Cone Maker

 

Into a large bowl sift the All Purpose Gluten Free Flour.  In a separate bowl add the melted Dairy-free Butter, Maple Syrup, Egg or Ener G Egg Replacer, Coconut Milk, and salt.  Mix together.  Add the the Gluten Free Flour and combine till it forms a batter.  Plug in the Mini Waffle Cone Maker and follow per manufactures instructions.  The one I purchased came with a small pre measured spoon for scooping the batter onto the hot plates.  I found that 2 spoonfuls worked great.  See photo below.  Once the batter has formed into a waffle, take the prepping cone provided with the kit and quickly wrap the Mini Waffle around the cone.  Repeat till batter is depleted.

Now...Here comes the fun part.  Spoon some of the Toasted Pecans into a shot glass then scoop some Butter Pecan Coconut Milk Ice Cream into a waffle cone.  Dip into the shot glass of Toasty Pecan Goodness and eat em UP!!  Enjoy:)
