Orange Cacao Pots de Creme(vegan) topped with Powdered Sugar + Dehydrated Clementine Slices
I've been meaning to get this food story out before now but it seems January's energy has brought a wave of introspection. Not that I'm complaining because turing inward also yields wonderful life changing wisdom but try telling THAT to your creative side who just wants to be free. So my creative processes have been, how shall we say, a bit slower. I always think it's important to lean into that inward pull. Your soul definitely knows your needs so this process will always reenergize a new perspective. And that perspective will only heighten all creative endeavors. So let's get started. This food story actually began to form after I dehydrated a bunches of Clementines. I wanted to pair them with something simple. Orange and Chocolate have always been great companions and that's when the complete visual concept appeared. Orange Cacao Pots de Creme. I also knew I wanted it to be dairy-free so I turned to the trusty Cashew and away we went. Continue below to follow this yummy adventure:)
Here's what you'll need to get started...
1/2 cup Cashews
1 1/2 cup Water
3 tbsp Raw Cacao Powder
3 tbsp Sugar
1 tbsp Honey or Agave
1 tbsp Agar Agar Flakes
2 tsp Orange Extract
Powdered Sugar(for sprinkling)
6 mini Ramekins
Clementines(or other favorite)
Let's first start with the Clementines. I used an Excalibur dehydrator to create the crisp slices. If you don't have one, no worries…Simple and Crisp makes a wonderful artisanal dried Orange. Check them out here. I do though highly recommend a dehydrator. They may seem to be a pricier kitchen tool but well worth every penny. So let's get on with the prep. First lets rinse off the Clementines. Use as many as your dehydrator will hold if you like…they're absolutely addicting once you start crunching on them so extra are welcome. Next, fit your food processor with the blade attachment. I set mine at the 1 notch to create a very thin slice. Remove the large pusher from the top of the food processor and place 1 Clementine in the open work bowl cover...navel side up...snug to the far right(this prevents it from rolling and creating odd shaped pieces). Add pusher back in place and turn machine on...gently pushing until the Clementine is sliced. Turn machine off. Remove cover and carefully lift the slices out…they're delicate at this stage. Place the slices one at a time on a dehydrator sheet. Repeat this process with as many as you want and dehydrate per manufactuer instructions. I set mine at 135 for about 4 hours or until desired crispness was achieved.
You'll definitely want to make these ahead of time so they're ready to enjoy with the Orange Cacao Pots de Creme OR as I said before they're quite delicious as a healthy snack.
Now let's move on to making the Orange Cacao Pots de Creme. First, gather all your ingredients. Then place the Cashews and only 1 1/4 cup water in a high speed blender(Vitamix). Place the remaining 1/4 cup water in a microwave safe bowl and set aside. Turn blender on and slowly bring up to high for a couple of minutes. Next place the remaining water in the microwave for about 45 sec. This will get it boiling. Remove immediately and add Agar Agar Flakes and stir repeatedly till the flakes are half dissolved. Slowly turn blender off and add the Agar Agar mixture and blend for another minute. Turn machine off. Place this mixture in a sauce pan and add to it the Raw Cacao Powder, Sugar, and Honey. Turn heat to medium high and continually whisk till ingredients are incorporated. Continue whisking till the mixture starts to just thicken(you want it to tighten up but stay fluid for an even pour into the Ramekins). Remove from heat and quickly add the Orange Extract and whisk till the mixture is glossy and smooth. Pour into Ramekins.
Let set at room temperature for about 5 or 10 minutes then place in refrigerator for about an hour to an hour and a half total. They're best enjoyed immediately so remove from refrigerator, sprinkle with Powdered Sugar, and throw in some dehydrated Clementine Slices. ENJOY!!:)
