With Super Bowl tomorrow and party preparations underway, I wanted to pull together something quick, easy, and delicious.  Sweet Potato Fries are always a winner so I decided why not make wedges instead and toss them with a little Truffle Oil and Aged Balsamic.  But then another idea hit me.  There will most definitely be chili at these nation wide soirees so why not make a dip out of it.  I just so happened at the time to have some homemade Veggie Chili on hand...soooooo into the Vitamix it went...and out came a new scrumptious treat.  The combination was a flavor WIN.  So here's what you'll need...

Sweet Potatoes

Truffle Oil

Aged Balsamic

Chili

Almond Cheese(or which ever you like)

Dried Parsley

 

Start by cutting the sweet potatoes into wedges and lightly toss with Truffle Oil and Aged Balsamic till all pieces are coated.  I don't list any measurements here because it'll all be based on how many you make.  So just use enough to coat lightly.  Then pop into a 400 degree oven and bake for 40-45 minutes...flipping the wedges at the half way point.  When they're done, I like to toss with a little more Truffle Oil and Balsamic for extra flavor.

Next, take a portion of your prepared or leftover Chili and toss into a high speed blender or food processor.  Mix together.  If you have a thicker Chili add a little Veggie Broth here…it'll help keep everything moving.  Place mixture into a dipping bowl, add some Almond Cheese(I used Kite Hill), Dried Parsley, and then plate up with the Balsamic Truffled Sweet Potato Wedges.  Yum Yum…have fun and dip away.  ENJOY:)
