Happy Leap Year.  Since today only comes once every four years I'm celebrating our planets rotational calendar catch up with this BBR Broth Bowl.  BBR you say???  Well...BBR stands for Bella and Brown Rice Noodle Red Curry Broth Bowl.  I shortened the name because quite frankly it rolled off the tongue and stuck.  I developed this new goto a few weeks back because I love love love quick brothy bowls of flavor.  It's been my obsession lately.  It gives you a chance to see what's lurking behind all the cabinets or in the refrigerator and pantry.  The whole goal is to release ideas around which flavors pair well with others and go with the flow.  Let your instincts guide you.  Occasionally there's just not enough time to prepare a more engaged mindful meal but that doesn't mean you can't make something flavorfully quick that encourages mindful peace while you eat.  You most definitely can.  So the next time you need to whip up something quick, do so with loads of flavor then sit back, relax, clear your mind, breath in peaceful thoughts, and mindfully enjoy.  Continue below to follow this food story adventure:)

 

Here's what you'll need to get started...

Bella and Brown Rice Noodle Red Curry(aka BBR) Broth Bowl | Seed Plant Water Grow

5 large Baby Bellas(8 medium)

Maifun Brown Rice Noodles(handful)

1 Shallot

2 cups Veggie Broth

1/2 can Lite Coconut Milk

2 tsp Lime Juice

1 tbsp Prepared Garlic

1 tbsp Chickpea Miso Paste

2 tbsp Red Curry Paste(or to taste)

1 tsp Harissa

1/2 tsp Dried Cilantro

 

First let's prep the Shallot and Baby Bellas by slicing them into pieces.  Add Shallots to a sauce pan with a drizzle of Olive Oil and sauté over medium heat for a few minutes.  Add Garlic.  Keep heating for another minute.  Then add Chickpea Miso Paste, Red Curry Paste, Harissa, and Lime Juice.  Mix till everything is incorporated.  It will be thick at this point.  Now add the Baby Bellas and give it a quick mix.  Continue till the Bellas start to soften up then add the Veggie Broth and Lite Coconut Milk.  Keep simmering till everything is heated through and incorporated.  Add the Maifun Brown Rice Noodles at the very end with the Dried Cilantro.  Only use a handful of noodles because they will suck in quite a bit of the broth.  Serving size is two portions.  Enjoy:)
