I kind of got carried away with this food story adventure.  WELL...who am I really kidding...I always get carried away but this one just seemed to manifest with layers already attached.  The start of the idea came from a recipe that I created years ago but had lovingly tossed aside.  It actually took me a few days to locate it because at the time of it's creation I was in a phase of HIGH creativity so any scrap of paper got written on with no thought to organization.  I still write all over everything but have at least a 75% system in place to help with the overflowing madness.  And I could totally keep talking about THAT process but let's get back to the story.  Ah yes, my sister.  She was coming in for a visit and we had been discussing our frustration over Breakfast options.  Not that there weren't already a plethora of them available but nothing seemed satisfying.  Perhaps it was a phase and would soon pass but nonetheless here we were disgruntled and seeking some kind of morning salvation.  So setting out with that in mind and the located scrap of paper, I allowed this food story adventure to morph into something we would both love.

 My creative process always starts with a rush of inspiration.  It just keeps coming.  And being the steward of this frequency I happily get out of the way and dutifully oblige with whatever wants to come through.  I do this by taking notes, drawing pictures, writing down all the ingredients needed, and then get to work piecing a visual map together.  Every now and then I get lucky right at the start and totally hit that sweet spot in my creative stride where the Universe opens and pours forth a perfectly painted picture.  Because honestly, it usually takes playing with the idea and ALL the necessary elements to find it's way into the story wanting to be told.  And even then, it may decide to lay dormant for a while.  I believe this one came together a bit quicker because it WAS a dormant nugget that patiently waited for the right time to manifest.  That statement alone can be applied to so much.  As creative souls we can sometimes let slip that seeds are continuously planted throughout the duration of our life and that some of these seeds take time to grow.  The spiritual laws of this world are so beautifully in sync.  Just open your eyes wide and look around.  Breath the Spring air.  Listen to the birds sing.  Hear the laughter of children playing.  Slowing down to take in all the beauty around us allows these dormant seeds a way into our heart.  So truly, the journey is the thing and this creative seed brought me back full circle to the original source planted.  Thats's why once I engaged the path, it just clicked into place.  I'll be discussing more about that topic in a later post.  Many exciting things going on here at Seed Plant Water Grow.  But for now let's get started with this food story adventure.  And be sure to check out the video below of the entire process.  This one's a bit longer but I had a creative BLAST making it.  Enjoy:)


Here's what you'll need to get started(4 parts)...

Three Seed Morning Muffins

{400 for 25 minutes...makes 12)

2 tbsp Coconut Flour

2 tbsp Teff Flour

2 tbsp Sorghum Flour

2 tbsp Oat Flour

1/4 tsp Salt

1/4 tsp Baking Powder

1/4 Baking Soda

1 tbsp + 1 tsp Flax Meal

3 tbsp Water

2 tbsp Coconut Oil

1 tbsp Unsweetened Applesauce

1 medium Banana

1 small Carrot(shredded)

3 tbsp Maple Syrup

1 tsp Vanilla

1 tsp Cinnamon

2 tsp Millet Seeds

2 tsp Chia Seeds

2 tsp Crushed Pumpkin Seeds

12 Mini Muffin Pan

Mini Muffin Cups

 

Three Seed Topping

1/4 cup Millet Seeds

1/4 cup Chia Seeds

1/2 cup Pumpkin Seeds

Maple Syrup for Dipping

 

Coconut Buttercream

1/2 cup Dairy-Free Butter

1 can Coconut Cream(not milk)

2 tsp Light Brown Sugar

 

Dehydrated Strawberries

As many cartons you think you'll eat because they great for snacking


 

So let's start with the Strawberries.  You'll need a dehydrator.  I use an Excalibur.  Check it out if you don't have one.  It definitely gets loads of use in my kitchen.  You'll want to pre-rinse your Strawberries and cut the tops off.  Then slice them and lay then out on a dehydrator sheet.  Place in the dehydrator and set between 135-145.  It should take up to 8 hours.

The Strawberries will morph into several stages from chewy to crispy.  Stop the dehydration process when you've reached your desired texture.

Now let's move along to the Three Seed Morning Muffins.  Go ahead and set your oven to 400.  These are really super simple to make.  Start by adding all your dry ingredients into a bowl and mix together.  Then in a separate mixing bowl add the Flax Meal and Water.  Whisk together quickly.  This will form your egg replacer.  Let it set for a few minutes.  To this add your banana and with a fork mash it all together.  Then literally add all your other wet ingredients and give it a good mix.  Now add the dry ingredients to the wet mix and give it a good turn till everything is incorporated.  Line your Mini Muffin Pan with the Mini Muffin Cups and add two mini scoops of batter into each cup.  Check out the video at the beginning of this food story for a step by step visual instruction.

Place in a 400 degree oven for 25 minutes.  Remove and let cool(or not).

For the Three Seed Topping, add all the ingredients to a Mini Food Prep and give it a good blitz.  This will break everything up.  Place in a bowl and set aside along with a small bowl of Maple Syrup for dipping.

And finally the Coconut Buttercream.  Add the Coconut Cream, Dairy-Free Butter, and Light Brown Sugar to a mixing bowl and whip till light and fluffy.  I like to place mine in a pastry bag with a star tip for decorative dispensing but by all means you can totally store it in any container you like and keep refrigerated.  Just note that if going the pastry bag route it'll need a good 10 minutes to sit once removed from the refrigerator to be soft enough to use.

Place one Three Seed Morning Muffin top in some Maple Syrup then dip right into the Three Seed mixture.  Dispense a good dollop of Coconut Buttercream on top and finish it with a Dehydrated Strawberry.  And there you have it folks.  Three Seed Morning Muffins topped with Coconut Buttercream and Dehydrated Strawberries(Vegan + GF).  Enjoy:)
