Butternut Toasted Coconut Spice Cake with Candied Walnuts  | Seed Plant Water Grow

This food story traveled a creative arc of intentional play drawn from prior kitchen moments so because of it’s impromptu nature it will be told a little differently then my usual adventures. One of the things I love most about food stories is the ingredient gathering process, the visual mapping, the layout, the styling and the poetic display of those ingredients. There’s a story in the sense you feel from the colors, the depth of field, the singular focal point, drawing the eye where you want the viewer to go but allowing space for them to cultivate their own conclusions and hopefully open to new sensations, visually and experientially.

This story began with the intent to create a new morning muffin. I already have another recipe called Three Seed Morning Muffins so a foundation for something new had already been laid. I decided that Butternut Squash would be a great place to start plus Butternut Coconut Spice Morning Muffin just seems to roll off the tongue. I also really wanted to play with Teff Flour because of it’s nutty flavor. See picture below for the first Muffin run before it morphed into the reason for this food story’s existence. I was playing with all the ingredients around the time of my Mom’s Birthday so as it usually goes the path opened to create something special for her.

Add all the ingredients together in the order you would any cake recipe, keep the Coconut Milk on stand by for more moisture. I used a 9 x 9 square pan to bake at 350 for 1 hour. Once it cools cut the square into fours and stack for the beginnings of a double decker spice cake delight. The buttercream ingredients are listed below and are fairly straight forward. I don’t think you can go wrong with butter and powdered sugar so adjust taste to your liking. The Candied Walnuts are Walnuts mixed with Honey and toasted at 400 for about 10-15 minutes. You can throw in some Shredded Coconut at this time as well but keep an eye on it as it will toast quickly. Once you have all your components then assemble to your liking. ENJOY:)

3/4 cups Teff Flour

3/4 cups Almond Flour

1/4 cup Coconut Flour

1/2 cup Walnut Meal

2 tbsp Flax Meal

1/2 cup Sugar

1/2 cup Butternut Squash Purée

1 cup Shredded Butternut Squash

2 tbsp Coconut Oil

Coconut Milk (on stand by)

2 Eggs

2 tsp Five Spice

2 1/2 tsp BP


Five Spice Buttercream

Vegan Butter

Powdered Sugar

Coconut Milk

Vanilla
