Fresh Zoodle Noodle with Coconut Cashew Alfredo | Seed Plant Water Grow

This is one of my favorite ways to enjoy Zucchini. Raw Zoodles layered with a vegan version of Alfredo tossed with Basil, Tomatoes and Lemon Pepper. It’s simple, delicious and comes together quickly while also being the perfect amount of creative flow needed to manifest a healthy meal. Here’s what you need to get started…

Fresh Zoodle Noodle with Coconut Cashew Alfredo | Seed Plant Water Grow

Zoodles

Zucchini

Spiralizer

Coconut Cashew Alfredo

3/4 cup Cashews

1/2 cup canned Coconut Milk

1/2 cup Water

1 tsp Tarragon

3/4 cup Nutritional Yeast

1/4 tsp Smoked Paprika

3 tbs Lemon Juice

Himalayan Pink Salt to taste

Lemon Pepper to taste

Combine all Coconut Cashew Alfredo ingredients in a high speed blender…blitz till smooth and slightly warm. A few minutes should do. Add extra Coconut Milk if you feel it’s needed. Set aside. Then take one Zucchini and spiralize it using zoodle blade size preference. Place Zoodles in a bowl, toss with a good amount of Coconut Cashew Alfredo, add in Basil and slice up some Tomatoes. Top with Lemon Pepper and ENJOY:)
